Vegan Blueberry Muffins
Even though my family isn't vegan, because I have a dairy allergy I tend to incorporate vegan treats into our diet. I was so inspired by my morning bakery tour that I decided to bake my own. These muffins are a fam fave!! One thing that I like is that you can mix all of the dry ingredients together the night before and then quickly whip them up in the morning for a yummy breakfast treat.
Vegan Blueberry Banana Muffins
Makes 14 muffins or 6 large muffins
1.5 cups whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
3/4 tsp sea salt
5 lg ripe bananas mashed
1/2 cup coconut sugar ( can substitute with white if you want)
1/3 cup oil, (coconut or olive oil)
1 tsp pure vanilla extract
1- 1.5 cups blueberries ( I like a lot of blueberries, but its all your preference)
Coconut sugar to sprinkle on top
Preheat oven to 350 degrees. Coat muffin tin with spray. Whisk together all dry flour, baking powder, baking soda and sea salt, set aside
Combine bananas, coconut sugar, vanilla and oil in a large bowl. Fold in flour mixture and mix until smooth. Fold in blueberries. Scoop into muffin pan, Sprinkle tops with Coconut sugar
Bake in preheated oven. Mini muffins - 10-15 mins. Large muffins 25-30 mins. Muffins will spring back when lightly tapped. Enjoy!!
