Jambalaya
I absolutely love one pot dinners. They are a family fave as well. Not to mention way less dishes!!
Now that I have your attention, here is a great family one pot meal that is sure to please. We love our jambalaya with chicken and sausage but you can use your imagination and use hame, duck, shrimp whichever you like.

What You Need
1/4 Cup Butter
2 Onions, chopped
2 Garlic Cloves, crushed
5 Celery Sticks (Stalks), chopped
1 Red bell pepper, chopped
1 Green bell pepper, chopped
1 tsp Cajun Mixture , see below
1 Cup long- grain rice
14 oz Can of tomatoes, drained and chopped
1 lb Assorted meats ( chicken, duck, ham or sausage), sliced or diced
1 cup Vegetable stock or white wine
1 tsp Salt
Cajun Spice Mixture
1 tsp Salt
1 tbsp Sweet Paprika
1 tsp Dried onion granules
1 tsp Dried garlic granules
1 tsp Dried Thyme
1 tsp Cayenne
1/2 tsp Cracked black pepper
1/2 stp Dried oregano
The How
Melt the butter in a large, heavy-based pan. Add onions, garlic, celery, peppers and spice mixture and mix well.
Add the rice and stir well to coat the grains in the butter mixture.
Add the tomatoes, meats, stock or wine and salt. Bring to a boil, stirring well.
Reduce the heat, cover and simmer for about 15 minutes or until the rice and meat are fully cooked and rice is fluffy and has absorbed all the liquid. If the mixture seems to be too dry then add a little boiling water, tablespoon by tablespoon, towards the end of the cooking time.
