Herbed Chicken Thighs in a Pesto Tomato Sauce

My Husbands side of the family is Italian so I naturally I love filling my belly with delicious pasta. I mean who doesn’t love carb loading on a weekday to help carry you through the busyness of life, lol. But in all honesty I LOVE me a good pasta dish. This one is easy peasy and like all of the stuff that I post here, its a hit with my family. In true Italian form this recipe doesn't call for exact measurements, use your feeling and taste to make it perfect for your family. Also make sure to make extra, leftovers are a great way to lighten the meal making load for a couple of days.

What You Need

Parmasen Cheese

Red Pepper Flakes

Italian Seasoning

Basil Pesto

Fresh Basil

Spinach

Garlic

Tomato Paste

Crushed Tomatoes

Bucatini - Or your favourite kind of pasta such as spaghetti

Chicken Thighs or even Chicken breasts if that’s what you have

Balsamic Vinegar

The How

  1. Cook Pasta - Make sure to cook your pasta till its el dente. Strain through. sieve then add back to pot and drizzle with olive oil.

  2. Prepare Chicken - Heat Olive oil in a large skillet over medium- high. Pat chicken dry using paper towel, and season with salt, pepper and Italian Seasoning. Add chicken to skillet and sear for 2 mins on each side, or until golden brown and crispy.

  3. Prepare Pesto Sauce - Reduce heat to medium- low and add garlic, and tomato paste. Stir into oil. Add 1 cup water ( 2 cups for 4 servings), crushed tomatoes, pesto, red pepper flakes to taste, Italian seasoning, and balsamic vinegar. Stir. Let sauce simmer gently until chicken is cooked to an internal temperature of 165 F.

  4. Prepare Ingredients - Meanwhile, wash basil. Roughly chop spinach, Julienne basil leaves

  5. Serve - When chicken is cooked, add spinach and basil to the skillet and stir until spinach is wilted and bright green

  6. Serve - Place chicken onto plates. Add pasta to the skillet ad toss to coat in sauce. Divide onto plates next to the chicken. Sprinkle with parmesan cheese. Enjoy!!
