Baked Almond Chicken Schnitzel
My family loves a good homemade schnitzel, but as the cook of the house, frying it in oil is not something I love to do very often, if at all. Here’s a really easy, healthy dinner that’s sure to be a crowd pleaser. Its chalked full of flavour and because its baked its super healthy. There’s no reason why healthy can’t be delicious as well. Almond Chicken
The What
4-5 Chicken breasts
Almond Meal or Flour
Italian Seasoning
Himalayan Salt
Pepper
Garlic Powder
2-3 tbsp Coconut Oil - Melted
The How
Preheat oven to 350. Prep cookie sheet with foil and then a rack. Spray rack with cooking oil of choice
Using a soup bowl Mix Almond Meal/ Flour and Seasonings in a bowl, mix together with a fork to combine. I don’t measure, I just sprinkle a bit of everything in there till it looks good. You can get a bit creative here, you can even add some of your favourite spices if the spirit moves you.
Take a mallet and flatten the chicken breasts.
Melt the Coconut Oil in another bowl
One chicken breast at a time dip them in the coconut oil then coat in the almond mixture before arranging them on the rack.
Once all are done place rack in the oven for 30-35 mins. Once the timer goes off, turn the broiler on the oven and broil the chicken breasts until crust is crunchy and browned.
