Heirloom Salsa

Every year I plant what seems like a million tomato plants. My Italian father in-law is a big gardener and he prides himself on his heirloom tomatoes. I'm lucky that he brings me dozens of seedlings at the beginning of the season so I can make all sorts of great things to enjoy all winter.

This is my mother in-laws salsa recipe and its a huge family hit. I hope that it will become a favourite for your family too. You can make this large recipe and can it, or you can use this recipe and shrink it down for a single serving.

Heirloom Salsa

5.5  lbs of Heirloom Roma tomatoes -  Peeled

2  red onions- chopped

2 tsp salt

1 tsp cracked pepper

2 tbsp lemon juice

2 tbsp chopped cilantro or Italian parsley

1/2 cup vinegar

1 chilli pepper - more or less depending on the spice that you are looking for.

Options

roasted organic corn

bell peppers

I like to use these things in my salsa, that's my families preference. Plus I had them in the garden.

 Feel free to get creative with your salsa.

* TIP *

I peel and chop up my tomatoes and let them stand overnight in the colander in a bowl in the fridge, It helps get rid of the water so your salsa isn't too watery.
