Hamburger Soup
With Fall upon us warm cozy soup is a great and easy way to have a healthy meal on the table in a reasonable time with not too much effort. This recipe was given to me by my friend Tanya and it was an instant hit with our family. You can cook this when you get home from work or throw it in the crockpot before you head out the door, which I do more often than not. If you plan to cook it after work for a quick meal, make sure you sauté your veggies in a bit of oil or butter before your throw it in the pot.
NOTE * YOU CAN MAKE THIS SOUP MORE LIKE A CHILLI BY ADJUSTING HOW MUCH STOCK YOU USE.
Hamburger Soup
Serves 8
2lbs Grass Fed Ground Beef
2-3 Carrots ( depending on size)
Celery
Onion
Organic Beef Stock
1 Cup Frozen corn
2 14oz cans of crushed tomatoes (I used fire roasted Organic)
Handful of Quinoa
Squirt of ketchup
Italian Spices
Cook the ground beef, drain off any fat and add to your crockpot. If you are doing this in a saucepan then just cook the beef right in the pan. Chop up veggies and add to crockpot or brown veggies and then add to saucepan. Add stock, spices, quinoa and ketchup, corn and tomatoes and cook until done. Crockpot on low for 8-10 hrs In the pot approx 15-20 mins.
